Best way to find True South: Look up the time that the Sun rises and when it Sets at your location.

Divide that time in half.

At that exact time, the Sun will be at True South.

Set motor to the "0" Reference position.

Manually point your dish & motor assembly in the direction of the Sun at that time, then tighten down the bolts.

Tweak dish elevation as required.

That's it. You're done.
