PVR files to avi to dvd

Hello,
I recently posted earlier about recording tv with a usb stick. I did figure this out and it worked. I then ordered a 500GB External hard drive.
I received this hard drive today and it works perfectly for PVR functions.

I am wondering is there a way to view the EXT2 file system on the computer so I can view these recorded files and attempt to convert them to an AVI file with xvid codec or something similar?

I watch a lot of ducumentaries and I would like to back up the ones I like to a DVD for viewing.

Any suggestions?
