Bbq Rules
BBQ RULES
We are about to enter the summer and BBQ season. Therefore it is important to refresh your memory
on the etiquette of this sublime outdoor cooking activity,
as it's the only type of cooking a 'real' man will do,
(probably because there is an element of danger involved.)
When a man volunteers to do the BBQ
the following chain of events are put into motion:
Routine...
(1) The woman buys the food.
(2) The woman makes the salad, prepares the vegetables, and makes dessert.
(3) The woman prepares the meat for cooking, places it on a tray along with the necessary cooking utensils and sauces, and takes it to the man who is lounging beside the grill - beer in hand.
Here comes the important part:
(4) THE MAN PLACES THE MEAT ON THE GRILL.
More routine....
(5) The woman goes inside to organize the plates and cutlery.
(6) The woman comes out to tell the man that the meat is burning. He thanks her and asks if she will bring another beer while he deals with the situation.
(7) THE MAN TAKES THE MEAT OFF THE GRILL AND HANDS IT TO THE WOMAN.
More routine....
(8) The woman prepares the plates, salad, bread, utensils, napkins, sauces, and brings them to the table.
(9) After eating, the woman clears the table and does the dishes.
And most important of all:
(10) Everyone PRAISES and THANKS HIMfor his cooking efforts. He then announces that we should do it again soon!
(11) The man asks the woman how she enjoyed
'her night off.' And, upon seeing her annoyed reaction, concludes that there's just no pleasing some women....

6 To 8 pound, bnls beef brisket
3/4 cup onion, finely chopped
1 tablespoon paprika
1/2 tablespoon pepper, freshly ground
1 cup prepared steak sauce
Special Sauce (see recipe)
Trim fat covering on brisket to 1/4-inch. Combine onion, paprika and pepper. Rub mixture evenly over surface of brisket. Place brisket, fat side up, in large disposable pan. Add 1/2 cup water. Cover pan tightly with aluminum foil. Place in center of grid over very low coals. (Single layer of coals with space in between each.) Place cover on cooker and cook 5 hours, turning brisket over every 1-1/2 hours. (Remove fat from pan as it accumulates with baster.) Add 1/2 cup water, as needed, to pan. (Be sure to add briquets as needed to keep coals at a very low temperature.) Remove foil from pan. Remove brisket; place on grid directly over very low coals. Combine pan drippings with steak sauce; reserve 1 cup for Special Sauce. Brush steak sauce mixture over brisket. Replace cover and continue cooking 1 hour, brushing occasionally with sauce. Cut into thin slices; serve with Special Sauce.
8 servings.
Special Sauce: Cook 1/2 cup finely chopped onion in 2 tablespoons butter until tender. Stir in 1 cup steak sauce-beef drippings mixture, 1 cup catsup, 1 tablespoon brown sugar and 1/4 to 1/2 teaspoon crushed red pepper. Simmer 10 minutes. Serve with brisket. 2 cups.
Note: Brisket may be prepared in water smoker. Prepare smoker according to manufacturer's directions. Place brisket, fat side up, directly in center of cooking rack. Cover smoker and smoke-cook at low to moderate temperature 4-1/2 to 5 hours.

Honestly, I would not mind a Food forum. When stuck with a Coolsat you need to find something to do with your time. I can even show you how to make your own pizza from scratch. "Show a man how to fish"

Try this as a side dish.Goes great with the BBQ
Cilantro And Roasted Potato Salad
2 pounds New potatoes, quartered
10 Fresh garlic cloves
Drizzle of olive oil
Salt, to taste
Freshly-ground black pepper, to taste
3/4 cup Mayonnaise
2 tablespoons Creole mustard
1 Lemon, juiced
1/4 cup Fresh cilantro leaves, washed, patted dry
4 Hard-boiled eggs, sliced
1/2 small Red onion, thinly sliced
Preheat the oven to 400 degrees.
In a mixing bowl, toss the potatoes and garlic with a drizzle of olive oil. Toss well. Season with salt and pepper. Place on a baking sheet and roast for 15 minutes, or until fork tender. Remove from the oven and cool completely.
Using a mini food processor, combine the mayonnaise, mustard and lemon juice. Process until smooth. Season with salt and pepper. Add the cilantro and continue to process until incorporated.
In a mixing bowl, toss the roasted potatoes and garlic, cilantro mayonnaise, sliced eggs, and red onions. Mix well. Season with salt and pepper. Cover with plastic wrap and refrigerate for 2 hours. Remove from the refrigerator and mix the salad. Re-season with salt and pepper if needed.
4 to 6 servings.
